Mom and Grandma would can a lot of the food we grew, such as green beans, peaches, pickles, and tomatoes. On the side porch of our old house, there was a trap door with a set of steps that led down underneath the house to an all-dirt-floor cellar. This is where we kept canned food on shelves and stored our potatoes on top of old sacks on the cold ground. The constant, cool underground temperatures were perfect for preventing the food from spoiling.

We kept a cow, which provided us with our milk and butter. In addition, our chickens produced plenty of eggs. However, if we wanted fried chicken or chicken and dumplings, it was my job to catch the chicken and kill it for our meal. This was not a glamorous job, but the delicious memory of my last fried chicken dinner helped me push through the gruesome act.
